Read menus for regular and modified therapeutic diets; As the lead Food Service Technician in the kitchen and dining room, assists in meal preparation, serve food, beverages, and snacks.; instruct, direct, lead, communicate, coordinate duties of the day; train Food Service Technician I’s; in accordance with the therapeutic menus, a dietitian and supervisor’s instruction accurately prepare and serve meals, beverages, nourishments, and secondary meal items. Notify cooks or supervisors immediately of missing or low items on the serving line; accurately record temperature of freshly prepared and left over food items, as well as equipment temperature.
Safely operate, clean and maintain food service equipment; assist in restocking supplies; notify appropriate staff of equipment not working properly; Maintain uniform food-handling practices and standards of safety and sanitation; follow departmental guidelines for the proper handling and storage of food and supplies; report any unsafe or unsanitary conditions immediately to supervisor on duty.
Work in various areas as needed to meet staffing requirements. Maintain all other daily reports and records as assigned; Understand and practice good customer relation skills and maintain good relationships with peers, home members, and personnel from other areas and in all public contacts.
Maintain an environment, which protects the rights, dignity, confidentiality and physical/emotional well-being of the Home Members at all
times. May act in the absence of the Food Service Supervisor I. Attend in-service training classes and regular monthly staff meetings, assist co-workers with any special clean up or extra jobs as related.
One year of experience performing the duties of a Food Service Technician I in the California state service.
Two years of experience in the distribution and service of foods in large quantity. This experience must have included the cleaning and maintaining of equipment and work areas.
Knowledge of: Arrangement and operation of dining rooms and food service counters; various types of dining room and service utensils and equipment and their uses; methods of cleaning and maintaining food service areas, utensils, and equipment; dining room sanitation and safety measures; methods of cleaning and preparing foods for cooking and storing food; operation and maintenance of various types of machinery used in pot washing, bake shop, and vegetable preparation; effective personnel practices and general pantry operation.
Ability to: Communicate at a level required for successful job performance; supervise helpers; give on-the-job instructions to helpers; keep records and prepare reports; read and follow serving instructions for therapeutic diets.
Sympathetic understanding of and willingness to work with the resident population of a State institution; personal cleanliness; and freedom from communicable diseases.
